Cheesesteaks. In honor of the Eagles. Even though the real Philly sandwich is the hoagie.

If you take 45 minutes to do it right, you can make a cheesesteak that rivals just about all other dishes in the world. And of course blows away and cheesesteak you'll ever encounter in Philadelphia, including the famous $100 cheesesteak.

I got a Groupon gift card for my birthday and decided to order a week of the hello fresh food delivery service. I'd normally never pay $10 per serving of food, but since it was a gift card and it was $5 per serving with the Groupon instead I decided to give it a try. As a single bachelor living by himself, I often fall into the frozen food/get takeout lulls even though I enjoy cooking.

It was nice having the food delivered to my door and then making the recipes on my own. Food was actually pretty good quality and I was overall impressed with the 3 recipes I made with it. All were pretty basic and I could've figured them out on my own but it was nice having the preselected ingredients and recipes. I doubt I'd pay $60 a week for 6 meals but it's a good option if you're busy, have the money, but still want to cook.

So now I’m just gonna make a peanut butter and banana sandwich and call it a day.

Last night: a baloney sandwich. I've been single-parenting a lot while the wife travels for work, and it was bad enough that I couldn't watch the selection show.

But hey, a baloney sandwich is underrated.

Actual mortadella like I used to get when I lived in Bologna (none of this pistachio nonsense), Best Foods mayo, crunchy butter lettuce, and tomato on ciabatta. It basically tasted like Italy.

A healthy version of Salisbury steak tonight. Cauliflower puree and a mushroom gravy with turkey meatballs. Immensely tasty for being very low in calories

Been doing a cauliflower mash in my food processor a lot lately. Been adding a dollop of cream cheese in addition to seasonings and it's great. No guilt whatsoever and every bit as good as mashed potatoes to me.

Mesquite smoked eye of round. Rub was salt, sugar, pepper, garlic, cayenne, cloves, cinnamon, and finely ground coffee. Grilled summer squash with a lemon/basil/dijon/caper vinaigrette and balsamic roasted beets on the side.

Absolutely crushed a London Broil on the Weber kettle last night. Really nice rub of salt, pepper, garlic, coffee and a pinch of red chili flake. On top of an everything salad with good blue cheese.

My wife has the summer off essentially between finishing nursing school and starting her job at the hospital. So she's been exceptionally bored basically being a stay at home wife the last 3 weeks. She thrives off of being constantly busy and engaged. I'm the chief recipient of this drive for activity as I haven't done any cooking, cleaning, shopping, laundry etc for almost a month (normally everything is split 50/50 as much as possible.

Anyway this is the dinner I came home to tonight. I'm gonna enjoy the summer!

My wife made gyoza the other day and it was terrific. First try and she nailed 'em.

She claims it was really labor intensive and she might not do it again (she did about 5 dozen I think). I might have to volunteer to help her out to give her encouragement.

Broiled asparagus, twice baked cheddar/scallion potato, and a 14 oz prime grade ribeye from Costco. Sous vide at 128 for 90 mins then seared in a stainless steel pan!

Nice. I haven't really embraced, or even tried, the whole sous vide thing, but I'm not going to argue with that picture above. That steak looks like absolute perfection.

Ordered Caribbean food from Grub Hub tonight. My wife and child did well, but the restaurant completely omitted my dinner. So I had to scramble and drive to get take out from a crappy Illinois Mexican restaurant.

Somebody get me the fuck out of here.

I went there like 2 weeks ago for the first time and I had the pulled pork sandwich from probably the same place. Biggest pulled pork sandwich I've ever had and a big side of onion rings for $9.

Just did a bang bang to celebrate my dad moving and retiring to Honduras. Dim sum followed by Dungeness and snow crab boil at angry crab shack in Mesa. I'm full but I don't feel gross...good combo.

I always over order when I’m by myself because I want a bunch of different things so I’ll order 5 rolls and then I’ll be so full I feel sick. But sushi is my guilty pleasure. The tempura oyster roll tonight was one of the highlights of my life.

Pot pie that I defrosted, made with smoked turkey from Thanksgiving. Quite tasty, I'm never not smoking a turkey again just so I can have the leftovers for pot pie.
