My Dad gave me his old charcoal smoker and a friend of mine brought me a dry rub and some barbecue sauce from Kansas City, so I'm making baby backs, calabacitas, and garlic toast. The ribs have been smoking over mesquite since 3:00 this afternoon and are almost ready to sauce.

I haven't been this excited about a meal for a while.

It probably would have been absolutely perfect if I had pulled the ribs off about 20 minutes earlier, but it was damn good. I had the leftovers for breakfast this morning.

Been putting my instant pot to use recently. Last two weeks I made five pounds of ribs, dahl, and last night... bolognese. All have turned out quite awesome. Sure as hell beats hovering over a burner for hours with my mouth watering into the dish.

Snagged a nice beef tenderloin on sale, butchered it (thank you YouTube), and then me and the fam feasted on Filet Mignon tonight.

Kind of crazy that I’ve got 8 more filets just waiting to get grilled, all for the price of three store bought filets and 15 minutes of butchering.

Going to make a stew later in the week with the parts that couldn’t get cut into steaks. Good eating on these cold Indiana winter nights...

Seared a couple of fat well-seasoned pork chops in the cast iron pan with bacon fat and finished in the oven. Paired with a good salad. Perfect.

Spinach, yukon gold potato, and goat cheese quiche with homemade crust. One of my favorites.

Also, if you haven't had the Costco brand goat cheese you're missing out. It isn't very strong but for a dish like this it's perfect. Or spread on some crackers with a little tart jam and some black pepper

Edit I was gonna come back and claim you haven't lived in Tucson until you've been to the butcher in Grande Ave, but I can't find it listed anymore, so either I'm remembering the locale wrong or its gone. Anyway I was reminded about the UofA Meat Sciences store - they used to have superb meat for really good prices - anybody been there lately? Is it still running?

Edit again: I'm sure the butcher I remember was on Grande sorta close by Pat's Chili Dogs, but I don't find it listed anywhere so it must be closed. Too bad.

The vodka sauce is good. Manicotti was one of my favorites.

It's always good to have 2-3 things from there in the freezer in case you don't feel like cooking.

Good point, but I won't quibble when it squeaks and pops sweetly in your mouth one can easily imagine winter is over.

Rocco’s pizza - finally had it tonight. Damn good pizza. Got the thin crust, of course. A proper grid-cut, real Chicago pizza. None of that doughy, radial-cut pizza that every other place forces you to try to eat by way of limp, triangle-shaped slices.

Thanks to you all for that brilliant rec. Falora is of course the best I’ve had, but Rocco’s all the way for what you can take home.

My freezer is now activated with promise.

And tonight I had their beef ravioli. I swear it's full of beef marrow. So good.

It is. And it's just as easy as toasting the bread: Just put the marrow bones in the oven for a few minutes. Marrow may be tied with any food vying for Best Food in the Universe. There's a reason why our ancestors sucked on bones.
