j/k longhorned. But you're looking at this all wrong. what the hell else are you going to do with your 4th if you aren't babysitting ribs? It's the only chore that allows you to drink all day without getting the stink-eye from the wifey. I think I'd pay double what you paid for that freedom.
BTW. My local carniceria started carrying a new adobo-style marinade to make Sonora style flanken cut beef ribs. Tried it yesterday. Let's put it this way, my cousin that hasn't eaten meat in 4 months broke down and had one they looked/smelled so good. I have to find a way to get you some to try it out!

Damn that's one thing I haven't done is smoke more. I'm making chile colorado this weekend though with a plethora of about to get too old dried anchos, chile negros, and guajillos.

Pan-seared ribeye steaks with guacamole and tortilla chips
This is probably the final week of meat eating in our house.
This pandemic is awesome for the environment. Instead of being assholes and buying up all the meat for our freezer, we'll take part in this world event and go vegetarian like everyone else.
I'll still be an asshole, but mostly in my insistence that the students read the Discourses of Epictetus and the Meditations of Marcus Aurelius.
Then when the semester's over, I'm coming after you all to read the Ennead of Plotinus.
This is probably the final week of meat eating in our house.

Didn’t know there were any vegetarians anymore—thought everybody went straight to vegan. I could do vegetarian for stretches, but I don’t think I can ever go vegan even temporarily.

A few years ago I was at a touristy farmers market in Queensland somewhere, probably outside Noosa. There was a T-Shirt stall with some pretty good designs, and I picked up a couple. Called in a take-out order from the Lost Taco Shop, which the Sonoran Brunch Company becomes at 4 pm during this time of isolation and closures.
The tacos are spectacular. The night menu also has the burros and tortas and "Sonoran grinders" of pre-2 pm.
I picked up my order and teared up a little on the drive home. I love Tucson and I miss it.

Chile colorado looks amazeballs!
I killed it tonight (forgot to shoot a pic). Here are the Rancho Gordo yellow eye beans I cooked with:

Ingredients:
Cooked Rancho Gordo yellow eye beans
Grated a lemon zest on a microplane
Grape tomatoes sliced in half
Olive oil
Chicken thighs
Shallots, finely diced
Kale
Salt and pepper
Sauteed kale in olive oil, set aside
Cooked chicken thighs in olive oil, set aside
Sauteed shallots in the pan
Deglazed the pan with the shallots and lemon juice and bean liquid
Added the yellow eye beans
Added back the kale
Added the tomatoes and lemon zest
Turned off heat and added fish sauce
Plated it with the chicken thighs on top
