Ever grilled beef back ribs or short ribs? Seems like everyone online has all kinds of rules that make me feel like I'll fail. I picked up some back ribs, and I thought I'd just grill them a long time in the cooler part of the grill with the lid on, like 3 hours (?)Merkin wrote:Grilled sirloin roast.

The salmon with Asian slaw and Sriracha aioli I posted a pic of in the Great Recipes thread at TOS. No pic this time, but holy fuck it was good.

well sd86 is out of town and i have the roost to myself and i'm lazy...so i stood in front of the fridge and ate out of it for a bit...leftover pasta salad...cantaloupe, chips and salsa, beer..
i was going to put the ua/asu records here...but i forgot what they were.
i'll just go with fuck asu.

Big fans of beef short ribs at my house. They're almost idiot proof. Can cook for a half-hour or 3 hours. Thin cut or thick.
Take well to steak seasoning. Marinate beforehand in brown sugar, hot sauce (Sriracha) and soy sauce for a Korean flair. Mmmmmmm.
Some cook them so they "fall off the bone". If you like them that way, gotta cook them a long time in liquid to break down all the connective
tissue. I've made them that way in a slow-cooker, using coffee as a main ingredient. Really good that way, but I'm perfectly OK with them
cooked dry and ending up chewy.

We really do need to eat biscuits more often. Should be a staple, like they are in The Grapes of Wrath. Noodles for dinner? Gonna need biscuits with that. Thanks. And this issue about "fall off the bone" has gone too far. People demand that, so bbq restaurants end up boiling their ribs so that happens. For tonight, I made this up but I'm sure it would go over well in Sicily: penne with olive oil, pan-toasted pine nuts, pan-grilled finely chopped onions, cherry tomatoes, basil, kalamata olives, tuna, capers, grated lemon zest, and finished with fish sauce and extra-virgin olive oil.
I put in an order with my fish monger for tomorrow night: a wild king salmon who at this very minute is still swimming obliviously in Alaska.

Liverwurst sandwich with havarti, tomato, lettuce, mayo, Guldens mustard, lots of fresh cracked pepper, on both the wurst and tomato layers, and a pinch of salt on a pretzel hoagie roll. Every once in a while a liverwurst sandwich is the ticket. Plain original Ruffles potato chips on the side. Cold Red Stripe. Followed by cold Fly Line Vienna style lager from local Payette Brewing Co.

4 5-6 oz Swordfish steaks
1/3+ cup White Wine
1/3 cup EVOO
1/4 cup lemon juice
1/4 cup grilling seasoning
2 tbsp soy sauce
2 tbsp water
1 tsp fresh basil
2 cloves garlic
1 lemon zest
Salt/Pepper fish, then marinate at room temp for 20-30 minutes.
I use charcoal, but hot, so high heat if propane.
Grill 3 minutes per side, flipping until each side is cooked for 6-7 minutes (moist) 9-10 (flakey), marinating the top side after each flip.
Use remaining marinade to sauté some lemon zest dusted Zucchini/Summer Squash, add rice and glass of Pinot Grigio and you have a crisp, clean taste than is robust but not over powering.

For tonight I plan more than one healthy glass of some kind of cold white wine.
And I went overboard and ordered me a pound of troll-caught Alaskan Wild King Salmon. They catch it in the ocean with herring-baited hook-and-line, and the fish is supposedly higher quality than the more matured salmon more easily caught in the river. $33 a pound. We'll see.
