Dinner Tonight

You ever have one of those dinners where you don't cook anything, and you just pick up a crusty loaf of bread, and a big old thing of butter, and sausage, and a couple of cheeses? And make some kind of salad to go with it, and there's a big cornucopia filled with fruit? And it's all laid out on your coffee table, and you sit on your couch with a full bottle of wine or several beers, watching something on the Netflix or the Amazon, and gorging yourself, wondering why you ever bother cook when you can just do this?

When my kids were little they were so used to Kraft Macaroni and Cheese that when I made them real mac and cheese like my mom used to make they hated it.

I thought sloppy joes went the way of the bologna sandwich (which needs a comeback). Kraft macaroni and cheese for the kids is cheating. Almost as much as chocolate cake for breakfast. "Dad is great..."

Just had some frozen pork gyoza from sprouts I pan fried with a rice wine vinegar/soy sauce/sesame oil/garlic/ginger dipping sauce

Ever tried those dim sum-like frozen steamed buns they sell in Asian markets? I'm curious.

i haven't, but they sound good...wonder if they sell them at the grant/stone asian market here in tucson

Okay, here's what I'm going for tonight. Total experiment, so it could fail.
It all takes place in a single cast iron pan. It's already been in progress for a couple of hours. I took two pounds of pork belly, removed the skin, scored it through the fat layers down to the red meat, and seasoned it with salt and pepper, rubbing the salt into the cuts. I put it in the pan, and put it in the oven at 300 degrees for a slow, low-temperature roast, rendering the fat and getting some good cracklings coming my way. I mixed up a pancake batter with no sugar or butter or oil in it. When the pork belly is crispy, succulent, soft, and unctuous, I'm gonna remove it from the pan, drain the rendered fat, and cook the pancakes in it, adding back the pork fat pancake by pancake. I'll stack the pancakes on the plates, and top the stacks with the pork bellies. Then I'll boil grade B maple syrup in the fatty pan, and pour the hot, fatty syrup over the pork bellies and pancakes. Grapefruit for dessert.

Sliced Summer sausage on saltines with cheddar chess sliced on top, assorted beers, dinner salad with ranch and tons of green/black olives, and some French bread with a little butter. No fruit. It's my, "the wife is coming home late so I don't have to put any effort into dinner", dinner. Now I'm a pretty damn good cook, but I love just putting this together and vegging to Netflix when I'm alone. It's my game day dinner often as well.

Burger (medium) with sautéed mushrooms and onions, champagne cheddar cheese, a fine wine aioli, avocado, and arugula on a pretzel bun. Cajun fries with a blue cheese dipping sauce. Sweet tea with three shots of bourbon.

I have the things to make homemade spaghetti sauce and garlic bread (my spaghetti sauce is really, really good), grilled pork chops and corn on the cob with an amazing dry rub I've been tweaking recently or frozen store brand pizza.
The oven is heating as I type.

I'm doing the pork chops this evening. The dry rub has been applied, the corn has been soaked, the potatoes have been brought to a boil and the grill has been lit. Should be a good meal.

Charcoal grilled everything: chicken thighs and legs with olive oil and lemon, potatoes, summer squash, zucchini, and grilled watermelon.
My favorite way to grill a watermelon steak:
Cut a thick steak from a seedless watermelon, keep the rind on, and cut off the thin green skin so that it looks like a beefsteak with the fat around it. Rub with salt, pepper, red chili powder, and olive oil. Fire it on the grill. The surface will caramelize and take on the look of a charcoaled steak. Eat it with a fork and steak knife.

I'd be thrilled with just chips and salsa for dinner. Or even just chips. I have a problem and can't really bring them in the house anymore.

Probably, but in this case whipped by my physician. I have a re-test for my triglycerides coming up, so she's going to know all about it. You see, I'm not even jealous of you eating a bowl of chips, because I'm too occupied by wondering how you don't eat the whole bag, and then another one, if you keep a backup. I can't stop eating store-bought tortilla chips. The ones that come in the brown paper bags with the rivets. The only way to stop is to keep them out of the house.

Just self control. I have the same problem, so I don't buy tortilla chips anymore. I really really like home made salsa. Which I don't make, but is available locally everywhere.

Spaghetti al'amatriciana. Usually I make it with La Quercia guanciale, which I love, but now we got an artisanal butcher who makes a pancetta from this damn good pork belly. That and a salad. And probably more watermelon is next now.

You go with a pork jowl or a pork belly. Make a spicy tomato sauce with the browned pork, rendering its fat. Cut an onion to release its onionness, but then remove the onion. Finish with a finishing olive oil. Pecorino romano is a must.
