By request from the wife: a “bachelor dinner bowl” of rice, beans, hot sauce, grated cheese, and a fried egg. She claims that was her go-to before we met. Seems like a reasonable standard for the thin times we’re in.

My three year-old's choice (she threw a fit when I resisted, so I gave in): Rancho Gordo Flageolet. She was right, I was wrong. I honestly think any beans would work equally well. I cooked them in a little oil and garlic and then mashed about 1/3 of them to make them creamy.

I wonder if this matters, though: the hot sauce. I used Sriacha. The slight sweetness was so perfect, I wouldn't want to mess with it.

I just have canned black beans and dried great northerns at the moment. Might pressure cook the white beans and use those.

Also I have about 10 kinds of hot sauce so I could experiment.

FWIW the wife says in response canned black beans are historically the beans of choice for this bachelor bowl.

Jamaican beef stew from serious eats. It's so good. Spicy, rich and beefy, acidic, a little sweet. Wife is making coco bread, a Jamaican type of slightly sweet bread/roll.

I want to go Mexicali for Chinese food. Chinese food along the U.S./Mexico border is amazing. In Mexico City, it's out of this world.

Worst Chinese food I've ever had is in Illinois. There was one really great place in Champaign, until the one person responsible for it moved back to China, and the whole place went to pot. I've never tried it in Indiana.

I love Chinese food all up and down California, and in Seattle. And of course, New York. Chicago, which is awesome for almost everything, is just sort of okay for Chinese food.

When I used to have to drive 2 hours to Indianapolis to shop at Trader Joe's, the employees would urge the customers like me to go out and try one of those sandwiches. They said they're amazing. I never did.

Real depth with that unctuous, savory layered eggplant. You'd also love Pastitsio, but it's one of the few things Roma Imports doesn't really do well.

I made something approaching a cheesesteak sandwich last night. On Arabic bread. Didn’t really enjoy it. Apartment smelled like a greasy spoon diner dumpster for the better part of a day. Back to salads and ordering out.

That's how you know you made a real cheesesteak. In Philadelphia we used leave our coats at home on a freezing cold day, so as not to let cheesesteak smell ruin our gear for the rest of winter.

1. Season and pan-sear two thick pork collar chops to medium rare
2. Serve
3. When your wife cries at the dinner table, set pork chops aside and refrigerate for two days
4. Carve pork chops to separate fat, meat, and bones
5. Dice fat and meat
6. Render lard from fat, reserve with chitterlings
7. Place two tablespoons of hot lard in pan with chitterlings, meat, bones, strained tomatoes, chili peppers, and a whole peeled onion cut in half
8. Simmer until fat separates from tomatoes
9. Mix with a pound of spaghetti and serve with freshly grated parm

I just used some olive oil, a store bought dry rub I had and slathered a store bought sauce 20 minutes before I pulled them off of the smoker. Smoked over mesquite since it's free to cut up at my Dad's house.
