I'm back in Tucson and a friend of mine and yours, Gato Salvaje, got me into La Parilla without an advanced reservation. For those of you who don't know, they grill the offal meats while compressing them under a large terracotta slab weighted down by what looks like a passed-out homeless man, who is actually the heavyset father of the chef-owner peacefully asleep. We had sweetbreads, kidney, hearts, and I can't remember what else. All of it has a thin, crisp (not quite burnt) outer layer and perfectly succulent inside. They keep coming by and serving you as much as you can eat. The salad bar is amazing but skip it and save all your room for the meat.

Totally from scratch and totally improvised red curry lamb with lamb stock-based basmati pilaf. Started at 4 AM, hopefully ready by 8 PM. I tried to quit cooking but then went nuts, cooking while holding a baby. Rounding it out with some leftover saag paneer and some other Punjabi vegetable dish from recent takeout, so don't tell me about shortcuts.

I think blue apron is great for people who don't spend time meal planning or have a hard time getting themselves to cook meals on their own (especially if you can afford blue apron on a regular basis). It is always better to see people cooking for themselves. I'm sure this will change when I have kids and less free time but I just can't imagine not doing all the meal planning and shopping and cooking myself.

My wife is pregnant and I pull down 60hrs per week, with an active 2yr at home.

We've been getting take out about three times a week, did the math and this is a much better way to go for us. Plus I like cooking at then end of the day, it's free therapy for me.

Yep you're exactly the people I think they are marketing towards. I feel the same way about the therapy at the end of the day thing. Most people think I'm crazy when i spend 1-2 hours a night after work cooking but I enjoy it. My wife is in school/doing hw/working for 50-80 hours a week right now so I'm not cooking as extensive meals (don't want to do all the dishes!).

All in all as long as people are taking the time somehow, some way to cook decent food at home then I think that's great.

Yeah wife does what she can and cooks about twice a week, which is down from non pregnant wife. But we just go stuck in this pizza, burritos, Chinese food, takeout hamburgers rut which is bad on all levels, Monet and health. Plus there is some cooking literacy that comes with BA that I'm holding to learn from. We'll see how it goes.

Yeah the last 2 months have been a little rougher with her in school. I've tried to spend many Sundays making a large batch meal (soups, stews, casseroles, enchiladas etc) and freezing them in my deep freezer. So then 1-2 days a week at least I can pull something out that is ready to thaw and go that is quality, home cooked food instead of take out. Not to mention the cost savings while our belts are pretty tight.

See thats what I need and I'm hoping to get for christmas, a deep freezer. I think it would significantly help with food planning and cost, like you describe.

Any tips? I was thinking one of the deep top door ones from home depot for like 200.

My dad gave us one from Sam's Club for a wedding present that is 7.1 cu ft and is perfect for what we need. Last I saw it was on sale for $149.99.

Edit..it's a Haier. Not super fancy but doesn't need to be.

Yup, thats what I was looking at 150-200. I agree, I don' t need fancy, I need reliable.

At one point I had chorizo, several lbs of bacon, 5 packs of hot dogs, 6 freezer bags of stew and soup, 6 casseroles or trays of enchiladas, steaks, ground beef, sirloin pork chops, loin chops, lamb chops, bone in chicken parts, boneless breasts and thighs, whole pork shoulders, a crate of otter pops and a few other odds and ends...

Tried to pretend otherwise for a few months, but there's no point wasting time with stuff from stores. If you don't love how something came out, you have no idea the degree to which it isn't your fault. The stuff in the stores is made for transport and shelf stability, not flavor and texture. It's supposed to be disappointing. There's a reason why they don't use that stuff in restaurants.

I hope Bob's Red Mill burns down. What a load of crap.

The first time I saw grits was at Ft Bragg NC in 1985. I thought it was Styrofoam. Tasted good though.

I love cauliflower fried rice.

Tonight I'm making some totchos! I have a bunch of leftover bbq pulled pork. Tater tots, pork, bbq sauce, cheese, red onion all nice and crispy and melted together.

I'd never heard of cauliflower fried rice or totchos. I think I need to do more with cauliflower. I can't make rice for a while because babies and toddlers aren't allowed to eat rice anymore.

Found some swordfish steaks in my freezer. Marinating them in honey, ginger and ponzu for this weekend. Also, have some big scallops but not sure what to do with them yet.

Cauliflower is a seriously underrated vegetable. Been using it a lot this fall. Very versatile. Recently made cauliflower "steaks" over faro with a marscarpone butter sauce.

They sell two big bags of already riced cauliflower at costco for like 4 bucks.

For my fried rice I cook the rice in a little oil with garlic, slt and pepper before adding in veggies. Usually broccoli, tomatoes, celery, carrot and scallions. Sometimes I will buy fried rice seasoning packets at an Asian market and add that in with soy sauce before adding in a few eggs to the center of the pan. Everyone I have made it for has loved it. You can also make a killer Spanish rice with cauliflower.

Meatloaf, garlic/chive/sour cream mashed potatoes, green beans and homemade bread. Chocolate swirled cheesecake bars for dessert.
