These early watermelons have been great not by virtue of being great watermelons but simply because they are watermelons, the first of this season, and because it's hot outside. Once they hit their prime they'll be glorious. When they begin to decline I'll excoriate them as garbage.

The Farm at South Mountain has it via their online farmers market. $10 a cut. We cooked it on a cedar plank with mustard and brown sugar over indirect heat on our grill.
It was the best piece of fish I've had since I was in Cabo and Turks.

If it’s on a restaurant menu I’ll order it if it’s prepared in a way I’m in the mood for but I don’t see that word and immediately salivate. I’ve had some not so great meals where tri was the protein.

I could eat Cardiff Crack for every meal. Thats the special burgundy pepper crusted tri-tip from the Seaside Market in Cardiff (San Diego). So good, they have their own store at Petco Park and also ship online.

One of my favorite meals, when we want to take the time to make it is Beef Wellington, but I actually use tri tip in place of the filet. It's less expensive, but more flavorful. And if you could tri tip right it's almost as tender as a filet.

Sushi bowls with salmon. "Sushi grade" is meaningless, and I have no idea where to get edible raw salmon during the pandemic, so I used a pack of Nova Lox from Trader Joe's. It was really good. The sweet vinegary taste of the sushi salmon went really well with the cold-smoked flavor of the salmon.
Can't recommend this meal enough. I make it even simpler by using whatever noodles I have around (fresh Chinese wheat noodles, spaghetti, soba, etc) and using a rotisserie chicken from Costco. Start to finish is a 15 min dinner and is easy and amazing to eat.

It looks great and I'm totally going to make this but I don't get the part about the broth. It isn't a soup, so she says you can go ahead and reserve it for a different use. What am I supposed to do with starchy stock after I cook noodles in it? Since the stock matters for the flavor of the noodles, I picture Kenji browning a whole unpeeled onion cut in half, a couple unpeeled bulbs of garlic, a carrot, and a celery stick while he browns the chicken, lets the stock make itself while the chicken simmers, discarding the stock vegetables, and then throwing in a little splash of fish sauce at the end to bring out the light stock flavor. 12-15 minutes doesn't get you a rich stock, but a rich stock would be too sharp on the noodles anyway.
Yea I never really bothered with the stock or broth since I usually went the lazy route with rotisserie chicken. But it didn't make much sense to me either. I just like the combination of funky/slaty/fatty/acidic/fresh herbs and onion flavor. It's perfect.
