No, I decided authenticity is meaningless and I can never find fresh stuff that recipes call for. You'd have never confused that for Indian food. It was like a Mexican mole. It had cinnamon, cardamon, cumin, fennel seeds, and chilies from Tumacacari. All it needed was to pass on the fennel seeds and add some sesame seeds, raisins, and chocolate.

Made some shrimp and cheesy grits tonight. Made with the homemade shrimp stock I made yesterday
i was going to put the ua/asu records here...but i forgot what they were.

i'll just go with fuck asu.

Oh god no. She won't even touch macaroni and cheese. Or any pasta. Not even PBJ.

Rejects all the amazing stuff her mom bakes.

She'll accept steak, hot dogs, hamburger buns (but not hamburgers), cold cuts, scrambled eggs, and parmigiano reggiano. Likes marshmallows or bad ice cream for dessert. That's it.

Make sure you're ready for anything.

Dried shrimp instead of fresh
Koshihikari rice instead of arborio
Sake instead of white wine
Dashi instead of usual stock
Miso instead of parm
Finished with mirin

Slow roasted a pork shoulder for carnitas tacos. I’d post a picture but we devoured that shit quickly. It was fucking delicious.

Variation on a simple recipe we've made for years. Steamed short grain rice, stir fried 2 bell peppers and an onion with garlic/ginger and some jalapenos, marinade chicken breast in fish sauce and corn starch then stir fry as well, combine the veggies and meat and simmer with a cup of Mae Ploy sweet chili sauce. Dump on top of the rice. Lots of veggies, velvety chicken due to the marinade, sweet, spicy, salty. Good stuff.

Sounds awesome. Is the only marinate liquid fish sauce?

Fermenting some tepache currently. It is a naturally fermented Mexican style drink. Just stick organic pineapple skins, turbinado sugar, guajillo chiles, cloves, star anise, and cinnamon sticks in a jar and cover with water. Then let sit in a dark place at room temp for 1-3 days...

Strain it out and fridge it. We'll see how it goes, I haven't done any fermenting in quite a while.

I used to make kimchi/kraut/pickles/hot sauce fairly often.

It was quite a decent amount of sugar. Like a quarter of a cup in a quart container. Not sure how boozy it'll get in 2 days though.

El Charro Cafe last night. It was so-so.

Night before went to Wild Garlic and one of my buddies hated it. He had some seafood combination plate that he said tasted bland. My rack of lamb was good.

Last full day in Tucson. Might do Seis Kitchen.

Honestly, for being the richest and "nicest' part of town, the foothills don't really have a lot of good restaurants. Fiamme pizza is supposed to be good.

The appetizer combo from Caravan Grill is my favorite.

Tabouli, Hummus, Baba Ghanous, 4 Grape Leaves, 2 Falafel, and pita bread.

Had the Wadmala burger at Pawley's Front Porch in Columbia SC (U of SC campus)

Place was on on Diners, Drive In's and Dives. Now I know why. Top notch burgers.

Arroz Caldo. One of the most simple and damn tastiest things I've made in a while. The crispy fried garlic is a necessity and it helps that I used homemade roasted chicken stock also.

I made a potage of roasted butternut squash, prosciutto, apple cider, parmigiano reggiano, cracked tellicherry pepper, a little nutmeg, and butter, topped with toasted pine nuts. I imagined that on my bike this morning.

With a pain levain from Time Market.

Speaking of which, I've decided I need more bread in my diet. This will be the great bread renaissance. Get on it.
